Baked Breadfruit - Caribbean Country Style
Get a full or roasting breadfruit for baking. Make sure to oil the breadfruit well and bake it in an oven at 400°F for one hour. When the breadfruit is baked, cut out a circle at the top of the breadfruit, then use a large enough spoon to scoop out the inside. Get rid of the heart of the breadfruit.
Mash the breadfruit that was scooped out and cream it with butter and milk. Season it with any meat of your choice, but it will go well with sausage, fried pork, codfish (saltfish) as well as ackee. Put everything right back in the case of the breadfruit and cover with foil paper. Replace in oven and heat thoroughly.
